In the heart of the the Bündner Herrschaft, Graubunden’s famous winegrowing district, sits the renowned Weingut Familie Hansruedi Adank. A family affair, the Adanks – Hansruedi, Rezia, and son and principal winemaker Patrick – manage a six-hectare estate in the charming village of Fläsch.

Like many winemakers in the region, Adank’s wines follow a Burgundian model, with Pinot Noir and international white wines the predominant focus. In addition, Patrick’s passion project – traditional method sparkling wines – is showing special promise.

More than admiration for tradition, the root of the commitment to these styles is the terroir itself. In addition to the cool, Alpine climate, Patrick points out that the soils are very similar to those found in Burgundy and Champagne, with permeable slate, chalk and clay rich in lime across the region. This Rhine valley also benefits from warm days, cool nights, and the warm Föhn wind that dries and ripens the fruit in the autumn.

While terroir contributes to the elegance and finesse that denote the house style, Patrick is also committed to the transmission of ideas from the regions that know the house’s grapes best: Burgundy for Pinot Noir and Chardonnay, Germany for its Pinot Gris and Muller-Thurgau, and Champagne for its sparkling program. Accordingly, Patrick himself studied at Germany’s famous Geisenheim School, and then interned at Sylvain Cathiard and Etienne Sauzet in Burgundy, as well as the Champagne house Bérêche & Fils.

But while these learnings influence the house style, it’s the soils that the Adanks hold most dear. Having always focused on sustainability, the Adank’s believe that “Our soils should be passed on to the next generation as diverse and as biodiverse as possible”. As a result, the family has embraced biodynamic viticulture practices, which now even extend to the winery, where the three-story underground cellar is managed according to the cycles of nature and the moon.
